Easy Weeknight Dinners: 5 Ridiculously Simple Meals for Busy Moms
Weeknights are hectic. Between school, sports, and work, getting dinner on the table can feel impossible. That’s why I always keep a list of easy weeknight dinners I can rely on when I’m too tired to think.
These meals use pantry staples, take minimal prep, and are ideal for when you forgot to thaw meat or have 30 minutes or less to cook.
Here are 5 of my favorite Easy Weeknight Dinners

1. Sheet Pan Chicken and Veggies
Throw chicken, potatoes, and broccoli on a pan. Drizzle with olive oil, sprinkle garlic powder. Bake for 25 minutes at 425°F. I love this sheet pan chicken teriyaki – I use it almost weekly.
2. Lazy Tortilla Pizzas
Everyone adds their own toppings to a tortilla. Bake at 400°F for 10 minutes. Perfect for picky eaters or cleaning out the fridge.
3. Crockpot Taco Meat
Dump ground beef, taco seasoning, and salsa into your slow cooker. Cook on low for 6 hours or high for 3. Use for tacos, bowls, or nachos.

4. Dump-and-Bake Pasta
Boil pasta, mix with jarred sauce and shredded cheese, bake for 20 minutes. Add spinach or sausage to level it up.
5. Rotisserie Chicken Hacks
Buy a store-bought chicken, shred it, and use it in wraps, salads, quesadillas, or quick rice bowls. Dinner = done.
