Cheesy Potatoes Cowboy Casserole

One of the many things I associate with the transition between summer and fall, is the food. Summer is usually filled with lots of light, quick and easy meals that we can eat on the go. Because the weather is so hot during the summer months, I try to keep the oven usage down to a minimum.
During the fall and winter, however, the kitchen gets more than its fair share of use. The family is inside more often during this time of year, and it’s nice to cozy up around the table with a nice, warm, home cooked meal.
I call these meals “feel good” food. The kind of food that is wholesome and filling. Things like casseroles, stews, and all things potatoes fit into this category for me. Since sitting around peeling and cutting potatoes for endless amounts of time isn’t one of my favorite pastimes, I use Simply Potatoes.

Slow cooker meals are not only easy to throw together, they leave your home smelling as if you’ve been slaving over the stove all day!
