Grilled Cheese Pizza with Farm Fresh Tomatoes
Cruising around the Farmers Market on Saturday morning is one of my favorite things to do with B. I haven’t been feeling the greatest and we’ve missed a few Saturdays, but this morning I was feeling good (Mostly thanks to the anti-nausea medicine my doctor prescribed). We had a good night sleep and a few bucks.
Little sparks of inspiration fly as I admire the tables of fresh produce in the warm sunshine. I noticed that lots of the farmers were offering beautiful tomatoes. I enjoy cooking with tomatoes, especially because I’m not a fan of them cold. I walked around and saw some farm fresh mozzarella cheese, some fresh bread, and basil plants. I have been craving pizza the past couple days. These ingredients were sticking out so much to me.
I got home and decided I was going to attempt a grilled pizza sandwich. I really wanted something quick and easy, but with the flavors of good pizza.
The ingredients I used:
- sandwich bread (Udi’s Gluten Free for my husband)
- mozzarella
- basil
- marinara sauce
- pepperoni
- and one of those gorgeous tomatoes.
I grabbed my sandwich grill and some butter.
It was SO quick and easy to throw this all together!
Put a little dab of butter on the bread you’ll be using, and put your first slice on the heat. Quickly assemble your pizza right there. I started with cheese, then layered the pepperoni, tomato slices, some more cheese, a drizzle of marinara, and a dash of basil. Pop the other piece of bread on top and close it up. A minute or two later you can pull out a melty pizza inspired grilled cheese sandwich. My toddler devoured his with no coaxing!

We make this kind of stuff all the time, sometimes just using up ingredients in the fridge to make a grilled sandwich. I could eat pizza 7 different ways seven days a week.

Wonderful. I also make variety of bread pizza. By adding onion, brocolli, mashroom, olives etc. Would try this basil and tomato one also.Thanks for post.

Sounds delicious!
I love bruschetta, but not the work of cutting up the tomatoes. So I just take a baguette, toast it with butter, then spread it with pesto, add tomatoes and mozzarella cheese, and bake it just enough to melt the cheese.
Looks really tasty and something quick to prepare.

I love the farmers market! What a great idea :) I was thinking about getting a sandwich maker because of all the cool sandwiches you can make, like a pizza one!

this looks delicious and it pairs my very picky daughters 2 favourite foods together – pizza and grilled cheese, this is a versatile meal too, lunch or dinner, or a great snack. I would stuff mine full with veggies, my daughter would love a meaty one.
