I love white chocolate as well… when I make Peppermint Bark I always add a layer of dark chocolate under the white chocolate, wonder if I did that with this one would it make it too rich?

The instructions call for melting it over the stove, however my fail proof way has always been in the microwave. Try this website and look under the microwave section, hope this helps 🙂

I just tried to make this recipe, and with good Ghiradelli white chocolate. I followed the directions on the packet to simmer (not boil) the white chocolate in a double broiler and stir constantly. The more I stirred, the more the chocolate hardened, it never even came close to melting I’ve got my Oreos and pretzels all chopped up together, but no white chocolate 🙁
Now it’s grainy and no where close to being able to pour over all the other goodies. Any tips?
