Easy Lasagna Soup Recipe

This hearty lasagna soup delivers all the classic flavors of lasagna in a quick and easy one-pot dish. Perfect for busy weeknights!

Ingredients
  

  • 1 lb ground turkey or italian sausage
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 2 tbsp tomato paste
  • 14.5 oz crushed or fire roasted tomatoes
  • 4 cups chicken or vegetable broth
  • 1 1/2 cups spaghetti sauce
  • 1-2 bay leaves
  • 6 lasagna noodles (or other pasta) broken in pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese grated
  • fresh basil (optional)

Instructions
 

  • Cook Meat & Onions: In a large pot, brown the ground turkey and diced onion over medium heat. Add minced garlic and cook until fragrant.
  • Add Soup Base: Stir in tomato paste, crushed tomatoes, broth, spaghetti sauce, and bay leaves. Bring to a simmer.
  • Cook Pasta: Add broken lasagna noodles. Simmer for 10-12 minutes, stirring occasionally, until pasta is tender.
  • Serve with Cheese: Ladle into bowls and top with ricotta, mozzarella, and Parmesan. Garnish with fresh basil if desired.
