- Cook Meat & Onions: In a large pot, brown the ground turkey and diced onion over medium heat. Add minced garlic and cook until fragrant.
- Add Soup Base: Stir in tomato paste, crushed tomatoes, broth, spaghetti sauce, and bay leaves. Bring to a simmer.
- Cook Pasta: Add broken lasagna noodles. Simmer for 10-12 minutes, stirring occasionally, until pasta is tender.
- Serve with Cheese: Ladle into bowls and top with ricotta, mozzarella, and Parmesan. Garnish with fresh basil if desired.
